Back with a special recipe !!! I learnt this recipe (Inspired by Vahrehvah’s recipe) for my hubby who loves dum biryani a lot.This is little lengthy process but trust me it would be very tasty !!! This tastes best with Mirchi ka Salan (will post this soon).Check out the process.

Serves: 4
Ingredients
Basmati Rice: 1 1/2 cup
Potatoes: 2
Carrot: 2
Beans: 8
Capsicum: 1/2
Cauliflower: 5-6 florets
Onions: 1
Green Chilies: 2
Ginger-garlic paste: 2 tbsp.
Curd: 3/4 cup
Cashews: few
Saffron: pinch
Milk: 3 tbsp.
Shah Jeera: 1 tbsp.
Elaichi: 3
Star Anise: 1
Bay Leaf: 2
Cloves: 3
Dalchini Chakka/Cinnamon Stick: 2
Mint leaves: 1 cup
Coriander leaves: 2 tbsp
Biryani powder: 1 tbsp.
Coriander powder: 1 tbsp.
Turmeric: pinch
Salt: As per taste
Oil: 3-4 tbsp
Method:
- Soak rice in water for 1 hour.
- Cook it with 1 bay leaf, 1 clove, 1 cinnamon stick and 1 elaichi and 1 tbsp of oil with 2 1/2 cup of water and salt. Cook it till it’s 80% done.
- Wash and cut all vegetables into big pieces.
- Fry cashews and keep it ready.
- Slice onions and fry it till it changes color.
- Warm 3 tbsp of milk with 1-2 pinches of saffron strands.
- Heat a pan with 3 tbsp of oil and add bay leaf, cinnamon stick, cloves , elaichi, star anise, turmeric and shah jeera to it.
- When they splutter, add ginger garlic paste to it. Fry them and add vegetables to it.
- Add biryani masala, coriander powder, salt, mint leaves, green chilies and coriander leaves to it.
- Stir it well and let all veggies cook for 5-7 minutes.
- Add 1/2 cup curd and let it cook for 2 more minutes and turn off the heat.
- Take a big vessel /handi and grease the bottom with oil/ghee.I generally arrange it and cook it in microwave for 10-15 minutes.
- Place a big spoon of vegetables , fried onions and cashews. Pour a 1 tbsp. of curd and adjust salt if required.
- Place rice on top it and pour saffron milk over it. Again arrange vegetables on rice. Do it alternately and cook it on low flame/ microwave for 10-15 minutes.
- Turn off heat and serve it with Mirchi ka Salan.
