Hi Buddies,
This is one of my favorite dishes (my mom’s recipe). This is very easy to prepare and tastes awesome !!! Aashu likes it a lot and it’s very healthy.It goes well with rice/ chapati and could even make a sandwich with it. To enjoy it completely,have it with vadiyam (onion and gummadikaya). Hope you too would love it !!!
Ingredients:
Serves: 4
Duration: 15 minutes
Spinach: 2 bunches
Onion: 1
Green Chili: 1
Ginger: small piece
Red chili: 2
Moong Dal: 1/2 cup
Chana Dal: 1 tbsp.
Urad Dal : 1 tbsp.
Cumin seeds: 1 tsp.
Mustard Seeds: 1 tsp.
Hing: Pinch
Turmeric: pinch
Oil: 1 tbsp.
Salt: As per taste
Method:
- Soak Moong dal for 15 minutes in warm water.
- Wash and finely chop spinach , onions and green chili.
- Heat a pan with 1 tbsp. of oil.
- Add chana dal and urad dal to it. After a minute add cumin , red chili, mustard seeds, hing and turmeric.
- When they start crackling, add ginger and green chili to it.
- Fry them a little and then add onions to it.
- Saute them and add moong dal to it (drain water and add).
- Fry moong dal for 1-2 minutes.It shouldn’t be cooked too long to retain its crunchiness.
- Finally add chopped spinach and salt.
- Stir it well and cook it for 7 minutes without closing the lid (This will not change color).
- Turn off heat.
- Serve it with rice and vadiyam.
