Couple of weeks ago, I was craving for a burger and didn’t want to eat the same Boca burger. When I was searching for patty recipes, I came across very interesting and healthy quinoa-black bean patty from vegetarian times. I adapted it to Indian taste (instead of black bean added black-eyed pea and Indian veggies and spices) and it came out very yummy and very close to aloo tikki burger. I have used guacamole as my spread but you can use cheddar cheese/ any spread of your choice. Had a hearty dinner and refrigerated the patty mix and had it for next 2 days in a row 🙂 .Try this irresistible desi version for sure!!!

Ingredients:
Burger buns: 2
Onions: 1
Tomatoes: 1
Spinach Leaves: few
For patties:
Quinoa: ½ cup
Black Eyed Pea/ Bobbarlu: ¼ cup
Potato: 1
Carrot: 1-2
Peas: ¼ cup
Turmeric: pinch
Salt: as per taste
Red Chili: ½ tsp. (adjust as per your taste)
Garam Masala powder: 1 tsp.
Chaat Masala powder: 1 tsp.
Onion: 1
Green Chili: 1-2
Ginger: small piece
Coriander leaves: few
Besan: 1-2 tbsp.
Oil: 2 tbsp.
For spread:
Avocado: 1
Lemon: 1
Method:
For Patties:
- Soak black-eyed pea in warm water for an hour.
- Cook quinoa and black-eyed pea in a pressure cooker.
- Boil potatoes and carrot in a vessel for 10 minutes.
- Transfer quinoa and black-eyed pea in a bowl and roughly mash it.
- Grate the boiled potato and carrot and add them to quinoa. Add peas also to the bowl (I used frozen peas).
- Cut onions, ginger and green chili into small pieces and add them to bowl.
- Now add salt, turmeric, garam masala, chat masala, red chili powder, cilantro and besan to the bowl.
- Mix it well and make big balls out of it. Press it to make it flat like patty.
- You can either bake it or shallow fry it. I opted to shallow fry them.
- Heat a wide pan with 1-2 tbsp. of oil and place the patties in it. Shallow fry them on both sides.
For Spread:
- Take a ripe avocado and cut it in half.
- Remove the seed and scoop the pulp and mash it into smooth paste.
- Squeeze a lemon and mix it well.
For Burger:
- Take a burger bun and add the guacamole spread to it.
- Arrange spinach leaves and place the patty on it.
- Add tomatoes and onions (cut them in round shape) on top of it
- Serve it with chips.
Notes:
- You can add garlic to the patty mix if you like.
- Patty mix could be refrigerated up to 3-4 days. Take it out and shallow fry them when needed.
- Burger buns could be slightly toasted with butter (my hubby likes it this way).
