Check out my summer special!!! I have tasted mango pie first at my cousin’s house and liked it a lot. After trying this couple of times this summer, I want to try something different with this. When I was making khandvi last week, it clicked to me that I can try mango pie layers instead of cake this time. To my excitement, I was successful 🙂 .So, my next job was to top it with nuts and fruits alternatively. Finally, when I served it to my hubby, he enjoyed every bite of it :). Really,it came out very yummy!!! Try out this super tasty dessert!!!
Preparation Time: 30 minutes

Ingredients:
Mango: 1
Cream Cheese: 2 tbsp. (I used low-fat)
Condensed Milk: 3-4 tbsp.(optional)
Agar Agar: 2 strings / ¾ cup
Strawberries: 2
Blueberries: few
Cashew Nuts: few
Almond: few
Water: 3-4 tbsp.
Method:
- Wash and cut mango into medium size pieces.
- Blend it along with cream cheese and condensed milk. If mango is sweet enough, you can skip this.
- Cut the agar agar strip into small pieces and soak it in warm water for 5 minutes. Agar Agar is use to give mango pulp a jelly consistency. It’s a vegetarian replacement for gelatin.
- Boil it in 3-4 tbsp. of water and mix it till it melts completely.
- Once Agar Agar melts completely, immediately add it to mango pulp and blend it for few seconds.
- Immediately, take it in a wide tray and spread it evenly. See that it’s at least ¼ inch or thick enough to cut it as squares. Don’t spread it very thin.
- Top it with nuts and refrigerate it for at least 5 hrs.
- Cut fruits into layers and chop nuts into small pieces.
- Remove it from fridge and cut it into small squares.
- Place square and top it with nuts (cashews and almonds) and place another square on it.
- Now place straw berry layer on it. Follow this process for 2-3 times.
- Lastly, add chocolate syrup on it and top it with blueberry.
- Serve it chilled.
Notes:
- You can add any fruit of your taste.
- Agar Agar could be found in most of the markets (India and US).
