This was our weekend lunch special !!! My hubby requested for a sunday special but to my disappointment found only few corns and broccoli in my fridge.Left with no option,I planned to mixed them up and stir it with nice masala to make it interesting. I’m not a fan of broccoli but started liking it recently as it’s rich in folic acid and very healthy. As broccoli and corn would make the curry very dry, added some tomatoes to it.Surprisingly,it came out very yum and we all loved it a lot!!! Try this healthy and tasty recipe for sure!!!

Ingredients:
Broccoli: 1 (Medium)
Green Chili: 1
Onions: 1
Tomatoes: 2
Sweet Corn: ½ cup
Ginger: Small piece
Green Chili : 1
Salt: as per taste
Dhania Powder: 1 tbsp.
Garam Masala: 1 tsp. (optional)
Turmeric: Pinch
Mustard Seeds: 1 tsp.
Cumin Seeds: 1 tsp.
Red chili powder: ½ tsp. (adjust as per your taste)
Oil: 1 tbsp.
Asafoetida/Hing: pinch
Water: ½ cup
Method:
- Wash and cut broccoli, onions and tomatoes. Also keep ½ cup of boiled sweet corn ready (I microwave fresh corn for 2-3 minutes).
- Heat a pan with 1 tbsp. of oil and add mustard seeds, cumin seeds and turmeric.
- When they start crackling, add hing, ginger and green chili to it.
- Fry them a little and add onions to it.
- After frying onions, add tomatoes to it.
- Let it cook for 2 minutes.
- Now add all masala, salt, corn and water.
- After a minute, add broccoli florets to it and mix it well.
- Cook it for 5 minutes (don’t overcook broccoli).
- Turn off the heat.
- Serve it with rice or rotis.
