This was my weekend lunch special!!! Few months ago when I was on a business trip, I had leisure time in the evening after reaching my hotel. Didn’t know what to do, as I was never that leisure back home (always busy with my house hold chores, cooking, feeding aashu uuff list goes on…). I used to watch some random TV shows (never watch TV at home) and then I came across this interesting recipe on one of the shows (don’t remember exactly which show). I adapted it as per my taste and it’s a big hit at my home. I tried to make it very healthy but not at the expense of taste :). We all loved it!!! Have a look at the recipe, try it and let me know how it goes!!!
Preparation Time: 40 minutes
No of Servings: 4
Ingredients:
Tomatoes: 4
Quinoa: ¼ cup
Water: 1 cup
Onions: 1/2
Broccoli: Few pieces
Cilantro/coriander: Few leaves
Olive Oil: 1 tbsp.
Pepper: ¼ tsp.
Garlic: 1-2 pieces
Italian Dressing: ½ tsp.
Basil leaves: ½ tsp.
Salt: As per taste
Shredded Cheese : 3 tbsp. (I have used skimmed Italian 5 cheese)
Method:
- Wash 4 medium ripe tomatoes.
- Cut the top part of tomatoes and scoop out all the seeds.
- Use that watery seed portion while cooking quinoa as it will add nice flavor to it. ( I have used the hard part in rasam)
- Preheat oven to 375 F.
- Meanwhile, wash quinoa and cook it in pressure cooker along with water, scooped seeds and salt.
- While it’s cooking, heat a pan with 1 tbsp. of olive oil.
- Add garlic, onions, broccoli, pepper, little salt, Cilantro and Italian dressing to it.
- Stir fry it for 1- 2 minutes and turn off heat.
- Mix quinoa and fried mixture.
- Fill the tomatoes with this stuffing.
- Add shredded cheese and basil leaves. Place them in baking tray and bake it for 15-20 minutes keep checking as may vary depending on tomatoes).
- Turn off oven and let it stand for 2 more minutes.
- Remove it from oven and serve hot. Is it yummy!!!
- Note:
- Quinoa can be replaced with Rice, brown rice or potatoes.
- Choose any type of filling and add spices of your choice.
