Happy Onam to all !!! This is my mom’s version of Avial and I simply love it. It’s very easy to prepare and is super healthy. You can add your choice of vegetables to make it more attractive for kids.Hope you all would like it.

Serves : 4
Ingredients
Curd: 1 3/4 cups
Potatoes: 1
Carrot: 1-2
Peas: 2 tbsp
Beans: 6
Bottle guard: small piece
Grated Coconut: 3/4 cup
Cumin seeds: 1 tsp.
Coriander Seeds: 1 tbsp.
Mustard Seeds: 1 tbsp.
Ginger: 1 inch
Green Chilies: 2-3
Salt: As per taste
Curry Leaves: few
Turmeric: pinch
Ghee: 2 tbsp.
Method
- Wash and cut all the vegetables into small pieces.
- Cook them in a separate bowl till they are 80% cook.
- Dry roast cumin and coriander seeds.
- Grind it after it gets cools.
- Make ginger and green chili paste.
- Heat a pan with 2 tbsp. of ghee.
- Add cumin and mustard seeds to it. When they start crackling, add curry leaves to it.
- Add turmeric, cumin, coriander powder, to it and ginger and chili paste and fry them a bit.
- Add cooked vegetables to it and cook it for 2-3 minutes.
- Add grated coconut and cook it for 2-3 minutes.
- Add salt and curd to it. Add little water if required.
- Stir it and let it cook for 5 minutes.
- Turn off the heat and serve it with hot rice.
Note:
You can add drumsticks, yam also to it.
